Fluffy Dinner Rolls

Ingredients:

  • 2 cups warm water (100-110℉) – 475 mL

  • ¼ cup honey – 50 g

  • 4 teaspoons active dry yeast – 14 g

  • ½ cup softened salted butter – 113 g

  • 2 eggs

  • 2½ teaspoons salt

  • 7 cups all-purpose flour – 1000 g

  • 3-4 tablespoons melted butter for brushing the rolls

Instructions:

  1. In a bowl, combine warm water (100-110℉), honey, and yeast. Ensure the water is at the correct temperature. Let it sit for 5 minutes until the yeast becomes bubbly and frothy.

  2. In a large mixing bowl, mix together softened butter, eggs, salt, and flour.

  3. Add the yeast mixture to the dry ingredients. Knead the dough for 7-10 minutes by hand, or 5-7 minutes in an electric mixer with a dough hook, until it’s smooth and elastic. Once done, place the dough in an oiled bowl, cover with plastic wrap or a dish towel, and let it rise for 1 hour or until it’s nearly doubled in size.

  4. Divide the dough into 30 equal portions, each about the size of a golf ball (approximately 58-60 grams). Cut the dough in half, then roll each half into balls.

  5. Roll each dough portion into a smooth, round ball.

  6. To keep the top smooth, gently press down with your hand and rotate the dough, tucking the edges underneath to stretch the dough taut and create an even surface.

  7. Place the rolls in a greased 11 x 18-inch baking pan (with edges), arranging them in 6 rows of 5. Lightly spray with baking spray to prevent drying, cover, and let the rolls rise for about an hour or until they’ve doubled in size and filled the pan. If the room is cool, they may need extra time. Preheat the oven to 375℉ after 45-50 minutes.

  8. Bake the rolls at 375℉ for 15-16 minutes on the middle or lower rack to ensure golden-brown bottoms.
